Is there someone in your household who is skeptical of all veggies? I have to admit that I was like that as a child, but I could always get behind carrots. There’s something about their sweet crunchiness that I’ve always found pleasing. I’ll even go so far as to say they are my favorite vegetable!

I’m a huge fan of raw carrots in salads, throwing them in a grain bowl or even baking them in muffins. But my all-time favorite way to prepare carrots is simply roasting them.

Cooking carrots in a simple marinade of lime juice, honey oil and salt takes carrots from good to wowza! These Honey Lime Roasted Carrots will knock your socks off, and I would even go so far as to say that they will convert all the vegetable-skeptics in your household to carrot lovers!

Honey Lime Roasted Carrots

Ingredients

  • 6-8 medium carrots about 1 bunch, washed, unpeeled, sliced
  • 1 tablespoon fresh lime juice
  • 3 tablespoons vegetable or canola oil
  • 1 tablespoon honey
  • 1/4 teaspoon of salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, whisk together lime juice, oil, honey and salt until well combined.
  3. Put the carrot slices in bowl with honey-lime mixture and toss to coat.
  4. Place on a baking sheet and cook for 30 minutes
