I don’t buy into many food fads. I don’t drink juices or create smoothies with strange ingredients. I just started spiralizing (about 2 years late), and up until recently, I wasn’t into ‘energy bites’. But about two weeks ago, I worked an event for CVS Health, where I spent the day talking about the healthy offerings you can find at CVS (seriously they are doing awesome things to make healthy living easier). They have every type of bar imaginable, and while I’m a huge advocate for KIND bars (I’m even a spokesperson for the brand), I received these Larabar bites in my gift bag.

I tried one, and I was immediately hooked. I love that they are bite size and satisfy your sweet tooth, while also providing energy for a workout. Plus, they are made with just a few simple ingredients–dates, chocolate chips, almonds, dried coconut and coconut flour. This got me thinking…Can’t I just make these bites for myself?

With a little bit of experimenting, the answer was yes! My bites are a bit more almond-y than coconut-y because I had some almond flour to use and couldn’t find any coconut that wasn’t covered in sugar. But let me tell you, these Chocolate Almond Bites are to die for!

They will indulge your sweet tooth and satisfy your midday hunger. And, if you’re like me and workout after work, these are the perfect snack for in between lunch and your workout. Plus, there’s no baking required! So yeah, I’m pretty much onboard with the ‘energy bites’ craze now…

A recipe for Chocolate Almond Energy Bites made with just a few simple ingredients. No baking!

Chocolate Almond Bites

Servings 6 teaspoon-sized bites
Calories 88 kcal

Ingredients

  • 1/3 cup pitted dates
  • 1/4 cup semi-sweet chocolate chips
  • 1 tablespoon unsalted almonds, chopped
  • 1 teaspoon unsweetened coconut flakes
  • 1 teaspoon almond flour
  • 1 tablespoon almond flour
  • 1/8 teaspoon fine sea salt

Instructions

  1. In a food processor or blender, combine dates, chocolate chips, almonds, coconut flakes and 1 teaspoon of almond powder. Process until finely chopped.

  2. In a small bowl, combine 1 tablespoon of almond powder and sea salt.

  3. Using a teaspoon, scoop out a small bowl from the date and chocolate mixture. Press it together so it forms a small lump. Roll the lump in the almond flour and then roll into a ball. Place on a plate covered in parchment paper. Repeat until all of the date mixture has been used. Refrigerate for at least 30 minutes.
