If you follow me on social media, have talked to me in person or have read my blog, you are aware that I’m running the TCS NYC Marathon this Sunday. Yup, it’s pretty much all I talk about. This week has actually been really weird because I’m not running much and I’m eating a ton. Hence, this recipe for Pear Spiced French Toast.

Healthy French Toast Recipe

You know what’s funny? I’m actually getting sick of carbs. It can happen–I promise you. Looking for ways to spice up my bread, I created a delicious recipe for French Toast that is super easy to make and definitely healthier than the traditional French Toast. I left out the butter and added one of my favorite seasonal fruits–pears. Plus, the cinnamon, nutmeg and cloves give it a warm and cozy fall taste. Before your next extra hard workout class, weekend hike or long run, whip up this delicious French Toast for some extra needed fuel.

Makes 6 slices of toast

cooking spray
1 pear, cut into 1-inch slices
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon brown sugar
1/4 cup of milk
2 eggs
1/4 teaspoon salt
6 slices of whole bread bread, preferably boule or multi-grain
1 tablespoon vegetable oil
Optional:
Vanilla yogurt (I like siggi’s or icelandic provisions)
Maple syrup
Orange zest

Directions:

  1. Preheat the oven to 350 degrees.
  2. Spray a baking sheet with cooking spray. Lay the pears on the baking sheet and place in the oven. Bake for 20 minutes or until soft.
  3. Meanwhile, combine the cinnamon, nutmeg, brown sugar, milk, eggs and salt in a large bowl. Then mix together.
  4. Dip each piece of bread into the egg mixture, and evenly coat each side of the bread.
  5. Heat a skillet over medium heat for 2-3 minutes. When the pan is hot, add oil to the pan. Place the bread on the pan and cook for 3-4 minutes or until golden brown.  Flip and cook for 3-4 minutes on the other side.
  6. Top each slice of French toast with roasted pears.
  7. Optional– Top each slice of toast with vanilla yogurt, maple syrup and orange zest.
