Make a homemade, healthy & DELISH pizza with Brussels sprouts, cheese, red onion and an egg on top in less than twenty minutes flat!
Did you know that naan pizzas are all the rage right now? I’m absolutely loving this new trend of making a pizza on a piece of naan bread. While I grew up eating traditional pizza every Friday night, I’m totally okay with embracing new flavors. I figured I would go non-traditional for this recipe, since I’m a non-traditional type of girl (read about my non-traditional career path here). The result is a really interesting and absolutely satisfying Brussels Sprout Naan Pizza With An Egg On Top.
The combination of bitter Brussels sprouts with salty parmesan and a rich egg makes a really delicious brunch or dinner. I will just leave these pictures here and let them do the talking. Oh, and I forgot to mention that this beauty is ready in less than 20 minutes.
Not to mention that it’s a pizza with fiber-rich veggies and protein, which is pretty hard to come by. In other words, you won’t feel weighed down and terrible after eating your own personal pizza.
Brussels Sprouts Pizza
Make a homemade, healthy & DELISH pizza with Brussels sprouts, cheese, red onion and an egg on top in less than twenty minutes flat!
Ingredients
- 1 whole grain naan bread
- 1/4 cup shredded cheddar
- 6-7 pieces of shaved parmesan
- 2 teaspoons red onion diced
- 1 cup shredded Brussels sprout
- 1 large egg
- 1 tablespoon olive oil salt and pepper to taste
Instructions

Preheat oven to 350 degrees F.

Top the naan bread with shredded cheddar and shaved parmesan. Then sprinkle the red onion and shave Brussels sprouts on top.

Crack an egg onto the middle of the pizza. Drizzle the entire thing with olive oil and season with salt and pepper.

Bake for 15 minutes or until the egg sets.
This was fantastic! Added avocado, a bit of pesto, mushrooms,and black olives, in moderation,of course. Will be making this again. Soon. Easy.

Overall this is delicious! I had a hard time finding a cook time that worked though. Almost had to double it for the egg to set.
I think you said plant based recipes but why is egg included here?
I sometimes use plant-based and vegetarian interchangeably. But this is a vegetarian recipe, not vegan.
