Ingredients
8ouncesfarro
1cupred grapessliced in half
1cupshredded Brussels sprouts
1/4cupfeta
1/4cupsliced almonds
1/4cupolive oil
2tablespoonsbalsamic vinegar
1tablespoondijon mustard
1tablespoonmaple syrup
1/4teaspoonsalt
Instructions
Cook farro according to package instructions.
Once the farro is cooked and cool enough to touch, place it in a large bowl. Combine farro with the grapes, brussels sprouts, feta cheese and sliced almonds.
In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup and salt.
Pour the dressing on top of the farro salad and serve immediately or refrigerate for up to 5 days.
