Ingredients

  • 1 cup frozen shelled edamame
  • 1 cup canned black beans drained and rinsed
  • 1 cup no salt added canned green beans drained
  • ½ cup canned corn drained
  • 2 tablespoons chopped scallions
  • ½ tablespoon sesame seeds optional

Dressing

  • 2 tablespoons canola oil
  • 1 tablespoon rice vinegar
  • 2 teaspoon lime juice
  • 1 teaspoon honey
  • ½ teaspoon soy sauce
  • ½ teaspoon sesame oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground ginger
  • ¼ teaspoon garlic powder

Instructions

  1. Cook edamame according to package instructions. Set aside to cool.
  2. In a large bowl, combine edamame, black beans, green beans, corn and scallions.
  3. In a small bowl, whisk together canola oil, rice vinegar, lime juice, honey, soy sauce, sesame oil, salt, ginger and garlic powder.
  4. Pour the dressing over the bean mixture and refrigerate. When ready to serve, sprinkle sesame seeds on top.
