Green Beans with Caramelized Onions and Cashews

Ingredients

  • 1/2 cup chopped cashews
  • 2 tablespoon olive oil divided
  • 1 medium onion thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 pound green beans

Instructions

  1. Heat a pan over medium heat. Add the chopped cashews and toast for 4-5 minutes (or until golden brown). Set aside.
  2. Heat a large pan over medium heat. Add 1 tablespoon of olive oil and sliced onions. Cook the onions until they are translucent (about 3-4 minutes). Add the balsamic vinegar and reduce heat to low. Cover the onions and cook on low for 25 minutes, stirring occasionally.
  3. Once the onions are caramelized, add the remaining 1 tablespoon of oil and green beans to the pan. Cook for 5-7 minutes.
  4. Remove from the heat and top with toasted cashews.
