Inflammation Fighting Lettuce Wrap

Servings 1 wrap


  • 1 piece of collard green
  • 1 carrot sliced into matchsticks
  • 1/4 cup purple cabbage thinly sliced
  • 3 pieces of roasted red pepper
  • 1/2 avocado
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon honey mustard dressing


  1. Cut the thick part out of the collard green stem (it should fold easily). Lay the collard green flat on a cutting board.
  2. Layer the thinly sliced carrots and cabbage along the stem of the collard green. Top with roasted red peppers, avocado, pumpkin seeds and a drizzle of honey mustard.
  3. Wrap it up like a burrito and enjoy!
