Vegan Stuffed Acorn Squash

Stuffed with a combo of brown rice, lentils, apples, raisins, pecans, rosemary & celery, it tastes just like vegan stuffing without the bread!

The ingredients:

Step 1:

Cut the acorn squash in half, and bake upside down for 45 min.

Step 2:

While squash is cooking, sauté the veggies in a pan.

Step 3:

Combine rice with veggies and sautè.

Step 4:

Spoon mixture onto cooked squash & enjoy!
