Moroccan Lentil Soup

This one-pot Moroccan Lentil Soup is packed with big bold flavor, with just 300 calories and 14 grams of plant-based protein! 

Step 1:

Heat large soup pot over medium high heat.

Step 2:

Add oil, onion, carrots, tomato, and garlic, and cook for 3-4 minutes or until fragrant.

Step 3:

Add the harissa and spices to the pot, and cook for another  1-2 minutes.

Step 4:

Add lentils, vegetable stock and water, and bring to a boil. Reduce heat and simmer for an additional 40 minutes.

Step 5:

Season with salt and pepper to taste, top with Greek yogurt and enjoy!
